An ice cold glass of milk.

Nature created the perfect beverage. A sweet, rich, creamy and satisfying food that has been dissected, researched and challenged all for the purpose of recreating. The sum of all the parts can be made but are we able to capture the essence of all that dairy can do in food?

Science is leading the way to bridge that gap and what seemed impossible is nearly within reach, whether it be from plant-based fermentation proteins or GC-screened flavor compounds. I look forward to the near future when this is mastered. Not at the expense of what started this journey but in gratitude of how something so seemingly simple as milk can bring endless joy to food.
