CREATING GROWTH FOR A SHELF-STABLE FRUIT/NUT BRAND IN THE FRESH PLANT-BASED MILK CATEGORY
Mariani is the largest grower of walnuts in the U.S. and has created a successful business selling retail culinary nuts and dried fruit. Mariani hired Mattson to identify and create new value added products utilizing their walnuts and almonds.
Mattson advocated starting with a line of refrigerated walnutmilk to fill a gap in the huge plant-based fresh beverage category. A key challenge was minimizing the off notes that are present in walnuts. Our team successfully developed and commercialized four flavors of walnutmilk, each delivering a smooth texture, without any bitter or tannic flavor.
In late 2017, Mariani Nut launched three of the four walnutmilk SKUs.
